Pumpkin Muffins

A true Fall favorite!

Whether you use homegrown pumpkins or store-bought puree, these muffins are soft, fluffy, and delicious.

Ingredients

  • 1 1/2 c all purpose flour

  • 1 tsp baking powder

  • 1 cup pumpkin puree (canned or fresh)

  • 1/3 cup melted butter

  • 1 tsp pumpkin pie spice

  • 1 1/4 cup sugar

  • 1/2 tsp salt

  • 1 tsp ground cinnamon

Steps

1) In a small bowl, mix flour and baking powder. Set aside.

2) Mix all other ingredients in a large bowl.

3) Slowly mix the flour/baking powder into the liquid ingredients, stirring until just combined (do not overmix).

4) Spoon evenly into prepared baking cups or tins.

5) Bake at 350* for 25-30 minutes

6) Allow to cool and top with frosting of choice. Our favorite is maple cream cheese!
